Preparation & Dough Setup
Take all ingredients out of the refrigerator about an hour before preparation so that they reach room temperature. This makes the dough easier to work with later.
Sift the flour into a large bowl and make a well in the center. Lightly warm the milk (it should be lukewarm, not above 40 °C, to avoid damaging the yeast). Pour the milk into the well, add 1 tsp sugar, and crumble in the fresh yeast. Stir in some flour from the edge with a wooden or plastic spoon until a thick pre-dough forms. Cover the bowl with a cloth and let the pre-dough rise for 15 minutes.
Meanwhile, clean and finely grate the carrots. The carrots provide special juiciness and tenderness to the dough.
Chef's tip
For a particularly shiny surface, you can brush the buns with a little melted butter immediately after baking.
The buns can be frozen perfectly. Simply reheat briefly in the oven or toaster.
