In a bowl, mix the quark with the wholemeal rye flour, egg, sesame seeds (reserve a small portion for sprinkling), psyllium husks, baking powder, herbs de Provence, and a pinch of salt.

Knead all ingredients into a homogeneous dough. Then let the dough rest in the refrigerator for about 20 minutes so that the psyllium husks can swell and the dough becomes more stable.

Preheat the oven to 180 °C (top/bottom heat). Line a baking sheet with baking paper. Remove the dough from the refrigerator and form 6 equally sized rolls with moistened hands. The moisture on your hands prevents the dough from sticking.
