Ingredients overview
- 200 g low-fat quark
- 100 g whole grain rye flour
- 1 egg
- 25 g sesame seeds
- 1 tsp psyllium husks
- 1 tsp baking powder
- 1 tsp herbs de Provence
- 1 pinch of salt
Combine the quark with whole grain rye flour, sesame seeds (reserve some for sprinkling), psyllium husks, baking powder, herbs de Provence, and a pinch of salt in a bowl to form a smooth dough. Let the dough rest in the refrigerator for approx. 20 minutes.
Preheat the oven to 180 °C (top/bottom heat). Line a baking sheet with parchment paper. Remove the dough from the refrigerator and form 6 equally sized rolls with moistened hands. Place the rolls on the baking sheet and sprinkle with the remaining sesame seeds.
Bake the rolls in the preheated oven for approx. 40 minutes until golden brown. Let them cool briefly before serving.
Chef's tip
Moisten your hands with a little water before shaping the rolls so that the dough does not stick.
