- 1 whole grain baguette (100 g)
- 100 g light cottage cheese

- 50 g smoked salmon
- ½ small red onion (sliced into rings)
- 1 handful arugula

Halve the whole grain baguette and then slice it lengthwise. Place the cottage cheese in a small bowl and lightly mash it with a fork to achieve a creamier consistency.

Stir the finely chopped chives, salt, pepper, and chili powder (if desired) into the cottage cheese. Spread the mixture evenly onto the bottom half of the baguette.

Distribute the smoked salmon, red onion rings, and washed arugula over the cheese layer. Close with the top half of the baguette and enjoy immediately.
Chef's tip
For an extra fresh note, you can drizzle a few drops of lemon juice over the salmon.
