Ingredients

  • 250 g wheat flour Type 405
  • 400 ml whole milk 3.5% fat
  • 5 eggs (size M)
  • 50 g white sugar / refined sugar
  • 50 g raisins sultanas

Pantry & Garnish

  • 50 g unsalted organic butter
  • 2 tbsp powdered sugar
  • 1 pinch iodized table salt

Preparation

    Separate the eggs. Beat the egg yolks with milk, raisins, sugar, flour, and a pinch of salt until a smooth batter forms. In a separate bowl, beat the egg whites until stiff and carefully fold the egg whites into the batter.

    Heat the butter in a large, oven-safe pan. Pour in the batter and first fry the Kaiserschmarrn over medium heat until golden brown on both sides.

    Preheat the oven to 180 °C. Place the pan in the oven and bake the Schmarrn for about 10 minutes until it has risen nicely and is golden brown.

    Remove the pan from the oven and tear the pancake into small pieces with two forks. Bake the pieces for another 2 minutes in the oven so they caramelize slightly. Before serving, generously sprinkle with powdered sugar.
