Ingredients
- 250 g wheat flour Type 405
- 400 ml whole milk 3.5% fat
- 5 eggs (size M)
- 50 g white sugar / refined sugar
- 50 g raisins sultanas
Pantry & Garnish
- 50 g unsalted organic butter
- 2 tbsp powdered sugar
- 1 pinch iodized table salt
Preparation
- 1Separate the eggs. Beat the egg yolks with milk, raisins, sugar, flour, and a pinch of salt until a smooth batter forms. In a separate bowl, beat the egg whites until stiff and carefully fold the egg whites into the batter.
- 2Heat the butter in a large, oven-safe pan. Pour in the batter and first fry the Kaiserschmarrn over medium heat until golden brown on both sides.
- 3Preheat the oven to 180 °C. Place the pan in the oven and bake the Schmarrn for about 10 minutes until it has risen nicely and is golden brown.
- 4Remove the pan from the oven and tear the pancake into small pieces with two forks. Bake the pieces for another 2 minutes in the oven so they caramelize slightly. Before serving, generously sprinkle with powdered sugar.
