Ingredients

  • 180 g wheat flour Type 405
  • 180 g refined sugar
  • 140 g egg whites and 100 g egg yolks (approx. 4-5 eggs)
  • 1 pinch of salt
  • Powdered sugar for dusting

Preparation

    Preheat the oven to 170 °C top/bottom heat. Line a baking sheet with parchment paper.

    Beat the egg yolks with half of the sugar until frothy. In a separate bowl, beat the egg whites with the second half of the sugar and a pinch of salt until very stiff.

    Carefully fold the egg whites and the sifted flour alternately in portions into the egg yolk mixture. Use a spatula or wooden spoon to gently fold just until everything is combined, to preserve the airiness.

    Fill the mixture into a piping bag with a plain nozzle. Pipe strips about 10 cm long onto the prepared baking sheet, leaving enough space between them. Generously dust the biscuits with powdered sugar through a fine sieve. Bake in the preheated oven for about 15 minutes until golden yellow.
Tip
For particularly even biscuits, you can draw lines on the back of the parchment paper.
After baking, let the ladyfingers cool completely on a wire rack so they become properly crispy.
