Ingredients

  • 150g couscous
  • 2 tbsp fresh mint
  • 2 tbsp flat-leaf parsley
  • Zest and juice of one medium lemon
  • 450g fresh salmon (3 fillets)
  • Some salt
  • Some pepper
  • 70ml cooking cream 12% fat

Preparation

    Preparation: Preheat oven to 180–185 °C. Prepare a baking dish (approx. 20 × 30 cm).

    Couscous: Prepare according to package instructions. Then add mint, parsley, lemon zest and juice, basil, cream, salt, and pepper and mix well.

    Baking: Place the couscous mixture into a baking dish. Place salmon fillets skin-side up on top and bake for 15–17 minutes at 180–185 °C.
  • 4
    Serving: Garnish with lemon wedges or freshly chopped herbs.
