Ingredients
- 150g couscous
- 2 tbsp fresh mint
- 2 tbsp flat-leaf parsley
- Zest and juice of one medium lemon
- 450g fresh salmon (3 fillets)
- Some salt
- Some pepper
- 70ml cooking cream 12% fat
Preparation
- 1Preparation: Preheat oven to 180–185 °C. Prepare a baking dish (approx. 20 × 30 cm).
- 2Couscous: Prepare according to package instructions. Then add mint, parsley, lemon zest and juice, basil, cream, salt, and pepper and mix well.
- 3Baking: Place the couscous mixture into a baking dish. Place salmon fillets skin-side up on top and bake for 15–17 minutes at 180–185 °C.
- 4Serving: Garnish with lemon wedges or freshly chopped herbs.
