Ingredients for Poached Eggs
- 4 eggs
- 3 tablespoons white wine vinegar
Ingredients for Pancake Batter
- 100 grams rye flour
- 100 grams whole wheat flour
- 300 milliliters fresh milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 egg
- 2 tablespoons olive oil
- 2 avocados
- 1 teaspoon cream cheese
- 3 teaspoons cress
- Ground pepper
Preparation of Poached Egg
- 1Whisk the egg in a cup so that the yolk does not break. Bring 1 liter of water with 2 to 3 tablespoons of white wine vinegar to a boil. Now stir the boiling water with a spoon or whisk to create a small whirlpool in the center of the pot.
- 2Then carefully place the egg into the center of the boiling water whirlpool. The white wine vinegar and the stirring motion cause the egg white to coagulate much better and wrap directly around the yolk, forming a white ball around the yolk.
- 3Let the egg simmer for 3 to 5 minutes, then drain on kitchen paper.
Preparation of Pancakes
- 1Mix rye and wheat flour. Whisk both together with sugar, egg, baking powder, salt, oil, and milk in a mixing bowl to form a smooth batter.
- 2Heat a small pan with oil. Carefully spread the pancake batter with a small ladle into a small pan so that the bottom of the pan is evenly covered. Once the pancake batter has set and can be lifted from the bottom, reduce the heat and flip it to the other side to finish baking. Bake the remaining pancakes according to the same instructions. Always stir the pancake batter briefly beforehand.
- 3Now arrange the avocado slices fan-shaped on top of the baked pancake.
- 4Drape the poached egg with cream cheese on the pancake and garnish with some cress.

The fresher your eggs are, the greater the chance that the yolk and egg white will not mix when cracked. And that is very important for poached eggs.
