Preparation method
Preheat the oven to 170 °C top/bottom heat and line a baking sheet with parchment paper.
Cut the zucchini into slices about 0.5 cm thick. Wash the tomatoes and peel the red onion; cut both into eighths. Spread the vegetables on the baking sheet, drizzle with 1 tbsp olive oil, season with salt, and bake at 170–180 °C for about 15 minutes.
Meanwhile, prepare the meat mixture. Peel the garlic and press it into a medium-sized bowl. Peel the yellow onion, finely chop it, and add it to the garlic along with the ground turkey, spices (oregano, cumin, paprika powder), and finely chopped parsley. Mix everything well and form 8 equally sized, elongated rolls (koftas) from the mixture.
Chef's tip
For extra juiciness, you can briefly sear the koftas in a pan before baking. Serve with a dollop of Greek yogurt or tzatziki.
