Peel, core, and cut the apple into pieces. Also peel the garlic, shallot, and ginger. Put everything together with soy sauce, sugar, rice vinegar, and pepper into a blender and process into a smooth marinade.

Cut the beef into strips about 3-4 mm thin. Lightly salt and add to the marinade. Let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Cut the yellow onion into eighths, clean the carrots and cut them into fine strips. Heat some oil in a pan and sauté the carrots and onions for about 2 minutes. Remove from the pan and set aside.
