Take the meat out of the refrigerator one hour before preparation so that it reaches room temperature. Coarsely crush the colorful peppercorns in a mortar.

Trim the meat (remove tendons and membranes) and tie it into shape with kitchen twine. Season generously with salt all around (approx. 2 tsp) and rub generously with the crushed peppercorns.

Preheat the oven to 140 °C top/bottom heat.
