Whisk the eggs with a pinch of salt and cook a thin omelette in a pan. Cut the omelette into strips. Lay out the beef slices flat, top with omelette strips, cooked ham, and plucked parsley. Drizzle with a little olive oil, salt, roll up tightly, and secure with wooden skewers.

Also lay out the pork neck slices flat. Top with pancetta slices, grated or finely sliced Provolone, and sprinkle with some breadcrumbs. Roll up tightly and secure as well.

Brush all meat rolls with olive oil and coat them in the remaining breadcrumbs. Fry them in a pan with a little olive oil until golden brown on all sides.
