Preparation of the Ribs

Place the beef ribs together with the salt, bay leaves, allspice berries, and peppercorns in a large pot with water. Cook the ribs until tender (approx. 1.5 to 2 hours), until the meat easily separates from the bone. Then remove from the water and let cool.

Marinating

Whisk all ingredients for the BBQ sauce (ketchup, vinegar, sugar, honey, oil, Worcestershire sauce, mustard, smoked paprika powder, and ground pepper) until smooth in a bowl. Generously brush the cooled ribs with the sauce.

Let the ribs marinate, covered, in the refrigerator, preferably overnight, so that the flavors can penetrate deep into the meat.
