Cut the beef sirloin into thin strips. Peel and finely chop the garlic. In a large bowl, mix the meat with the garlic, wok seasoning, salt, and pepper. Set the mixture aside and ideally let it marinate for 30 minutes (or less, if you're in a hurry).
Meanwhile, for the sauce, whisk together soy sauce, vinegar, brown sugar, cornstarch, and chicken broth in a glass or small bowl until smooth.
Cooking
Heat a large pan or wok over high heat and add 3 tbsp rapeseed oil. Add the marinated meat and sear for 3–4 minutes, stirring occasionally.
Chef's tip
For particularly tender meat, be sure to cut the beef against the grain.
If you like it spicy, add a few chili flakes to the marinade.
