Preparation method
Preheat the oven to 200 °C and prepare an oven-safe pan.
Trim the beef sirloin and season generously with salt and pepper on both sides. Heat a pan over high heat and sear the meat on both sides (approx. 1 minute per side). Then transfer the pan to the oven and cook the meat at 190–200 °C for about 6–7 minutes.
In the meantime, combine the coarsely grated radishes in a small bowl with Dijon mustard and natural yogurt. Season with salt and pepper.
Chef's tip
It is recommended to cook a larger piece of meat (at least 400–500 g) to achieve a more even result. The cooking time will then increase to approx. 11–12 minutes. For a less pink result, simply leave it in the oven for 5–10 minutes longer.
