Preparation
First, slice the beef and then cut it into very fine strips. Since the meat is only seared briefly, the strips must be thin to remain tender.
For the sauce, whisk together soy sauce, fish sauce, 200 ml water, and cornstarch in a small bowl until smooth. Cut the red onion and bell pepper into fine strips. Slice the black garlic thinly. Deseed and finely chop the chili pepper.
Cooking
Heat a pan or wok with a little oil until very hot. Sear the beef strips on both sides (only for a few minutes), then remove from the pan and set aside.
Chef's tip
Black garlic is fermented and has a mild, almost balsamic-like flavor without the typical pungency of fresh garlic. It gives the dish a very special depth.
