Ingredients

  • 500 g beef (sirloin)
  • 1 yellow onion
  • 2 carrots
  • 1 tbsp sesame seeds
  • 1 tbsp vegetable oil
  • 1 tsp salt Pl
  • 2 spring onions
  • 10 g cornstarch
  • Kimchi as a side dish

For the Marinade

  • ½ Braeburn apple
  • 1 shallot
  • 2 garlic cloves
  • 1 cm fresh ginger
  • ⅛ tsp black pepper ground PL
  • 4 tbsp soy sauce (reduced sodium)
  • 1 tbsp brown cane sugar PL
  • 1 tbsp rice vinegar

Preparation

    Peel, core, and cut the apple into pieces. Also, peel the garlic, shallot, and ginger. Put everything together with soy sauce, sugar, vinegar, and pepper into a blender and process into a smooth marinade.

    Cut the beef into 3-4 mm thin strips. Lightly salt and add to the marinade. Let it marinate in the refrigerator overnight, or for at least 1 hour.

    Cut the onion into eighths, clean the carrots and cut them into fine strips. Heat some oil in a pan and sauté the carrots and onions for about 2 minutes. Then remove them from the pan.

    Sear the meat in batches in the pan (approx. 1 minute per side) so it doesn't start to stew. If necessary, add a little more oil. When all the meat is done, leave the fond in the pan and deglaze with 200 ml of water. Heat and add the cornstarch mixed with a little water.

    Once the sauce thickens, add the meat, the fried vegetables, and the chopped spring onions back in. Season with salt and pepper and do not cook further. Serve with cooked rice and kimchi and sprinkle with sesame seeds.
