Preparing the Meat

Remove the meat from the refrigerator one hour before preparation to allow it to reach room temperature. Coarsely crush the colorful peppercorns in a mortar.

Trim the meat (remove sinews and silver skin) and tie it into shape with kitchen twine. Rub vigorously all around with part of the salt and the crushed pepper.

Preheat the oven to 140 °C top/bottom heat.
