Sömelek Köfte sind eine köstliche Spezialität der türkischen Küche: Zarte, spindelförmige Bällchen aus Rinderhackfleisch und feinem Bulgur werden sanft pochiert, in schäumender Paprika-Chili-Butter geschwenkt und auf samtigem Knoblauchjoghurt mit frischer Minze serviert. Preparation method
Prepare the köfte mixture
Place the fine bulgur and durum wheat semolina in a bowl, pour about 120 ml of hot water over it, cover, and let soak for about 10 minutes.
Add the ground beef, tomato paste, ground cumin, half of the salt, and freshly ground black pepper to the soaked bulgur. Knead the mixture vigorously by hand for 5–7 minutes until a smooth, cohesive texture forms.
Divide the mixture into walnut-sized portions and shape between lightly moistened palms into finger-length, spindle-shaped rolls (Sömelek Köfte).
Chef's tip
Persistence when kneading pays off: The more thoroughly the beef and bulgur mixture is kneaded, the better the Sömelek Köfte will hold together while simmering without any egg.
For a traditional touch, serve with warm flatbread to dip into the delicious combination of savory spiced butter and cool garlic yogurt.
