Preparation & Shaping Köfte

Peel the potatoes and cut them into approx. 1 cm thick wedges. Deseed the pointed peppers and cut them lengthwise into quarters. Cut the tomatoes into wedges. Peel the onion and garlic cloves and grate or chop very finely. Wash the fresh parsley, shake dry, and finely chop.

In a bowl, mix the minced beef with the onion, garlic, egg, breadcrumbs, half of the parsley, 1 tsp cumin, 1 tsp sweet paprika powder, 1/2 tsp chili flakes, 1 tsp table salt, and 1/2 tsp black pepper. Knead the mixture vigorously for approx. 5 minutes until it binds well. Then shape into approx. 12–14 elongated, oval köfte.

Searing & Layering

Preheat the oven to 200 °C top/bottom heat. Heat 2 tbsp of olive oil in a frying pan. Sauté the potato wedges for approx. 4–5 minutes from all sides until lightly browned, then remove and set aside. In the same pan, sear the köfte briefly over high heat for about 2 minutes on each side.

Chef's tip

For extra juicy köfte, let the meat mixture rest in the refrigerator for 20–30 minutes before shaping.

For a spicier kick, part of the tomato paste can be replaced with spicy Turkish pepper paste (Acı Biber Salçası).
