Preparation of the Rolls

Whisk the eggs with a pinch of salt and cook a thin omelette in a flat pan. Cut the omelette into strips.

Lay out the beef roulades flat. Top successively with omelette strips, cooked ham, and plucked parsley. Drizzle with a little olive oil, salt, and roll up tightly. Secure with wooden skewers.

Also lay out the pork neck slices flat. Top with pancetta slices and grated mozzarella. Lightly sprinkle with breadcrumbs before rolling, then roll up tightly and secure.

Chef's tip

For an extra crispy coating, you can use panko flour instead of regular breadcrumbs.

Serve the rolls with a dollop of fresh pesto for an additional Mediterranean touch.
