Preparation of the Steak
Remove the meat from the refrigerator 1 hour before preparation and let it rest at room temperature. Then generously season all sides with salt and freshly ground pepper. Pour 3 tbsp vegetable oil onto a large plate and turn the meat in it until it is evenly coated.
Preheat the oven to 160 °C top/bottom heat.
Heat a heavy pan (ideally cast iron) over medium heat until very hot. As soon as it starts to smoke slightly, add 1 tbsp oil and swirl to coat the bottom of the pan.
Chef's tip
For best results, use a digital meat thermometer and a cast-iron pan. The resting time after cooking is crucial for the juiciness of the meat.
