Soak the Pho noodles in lukewarm water for about 30 minutes, then drain and let them dry thoroughly.

Cut the beef sirloin against the grain into very fine strips. Prepare the sauce by whisking tamarind paste, cane sugar, fish sauce, and oyster sauce until smooth in a small bowl.

Heat the vegetable oil strongly in a wok or large pan. Add chopped garlic, shallots, and chili and sauté briefly until fragrant. Crack in the eggs and scramble them lightly.
