Ingredients

  • 2 large bell peppers (red, yellow, or green)
  • 300 g minced beef
  • 1 large yellow onion (diced)
  • 3 garlic cloves (crushed)
  • 1 egg (size M)
  • 2 tbsp tomato paste
  • 2 tsp dried rosemary
  • 125 g light mozzarella (coarsely grated)
  • 10 g fresh basil (finely chopped)

  • 1 tbsp extra virgin olive oil
  • 1 pinch salt
  • 1 pinch ground black pepper

Preparation & Stuffing

    Preheat the oven to 160 °C and line a baking sheet with baking paper.

    Wash the bell peppers, halve them, and remove the core.

    For the filling, in a large bowl, mix the minced beef with the diced onion, crushed garlic, egg, tomato paste, and dried rosemary. Season with salt and pepper.

    Evenly fill the prepared bell pepper halves with the meat mixture.

Baking & Serving

    Place the stuffed bell peppers on the baking sheet, brush with 1 tbsp olive oil, and bake in the preheated oven at 160 °C for 20 minutes.

    Briefly remove the baking sheet from the oven, sprinkle the bell peppers with the coarsely grated mozzarella, and bake for another 10 minutes at 160 °C until the cheese is melted.

    Let the finished bell peppers cool briefly, sprinkle with freshly chopped basil, and serve.
Tip
For a vegetarian option, you can replace the minced meat with a mixture of cooked quinoa and feta.
