Ingredients
- 2 large bell peppers (red, yellow, or green)
- 300 g minced beef
- 1 large yellow onion (diced)
- 3 garlic cloves (crushed)
- 1 egg (size M)
- 2 tbsp tomato paste
- 2 tsp dried rosemary
- 125 g light mozzarella (coarsely grated)
- 10 g fresh basil (finely chopped)
Pantry
- 1 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch ground black pepper
Preparation & Stuffing
- 1Preheat the oven to 160 °C and line a baking sheet with baking paper.
- 2Wash the bell peppers, halve them, and remove the core.
- 3For the filling, in a large bowl, mix the minced beef with the diced onion, crushed garlic, egg, tomato paste, and dried rosemary. Season with salt and pepper.
- 4Evenly fill the prepared bell pepper halves with the meat mixture.
Baking & Serving
- 1Place the stuffed bell peppers on the baking sheet, brush with 1 tbsp olive oil, and bake in the preheated oven at 160 °C for 20 minutes.
- 2Briefly remove the baking sheet from the oven, sprinkle the bell peppers with the coarsely grated mozzarella, and bake for another 10 minutes at 160 °C until the cheese is melted.
- 3Let the finished bell peppers cool briefly, sprinkle with freshly chopped basil, and serve.
Tip
For a vegetarian option, you can replace the minced meat with a mixture of cooked quinoa and feta.
