Preparation method

Preheat the oven to 200 °C and prepare an oven-safe pan.

Clean the beef sirloin steak, pat it dry, and generously salt and pepper both sides. Heat a pan over high heat and sear the meat on both sides (approx. 1 minute per side). Then transfer to the oven and cook at 190–200 °C for about 6–7 minutes until done.

Meanwhile, coarsely grate the radishes. In a small bowl, mix the grated radishes with Dijon mustard, natural yogurt, salt, and pepper to form a creamy dip.

Chef's tip

For optimal results, it is recommended to cook a larger piece of meat (at least 400–500 g). The cooking time in the oven will then extend to approx. 11–12 minutes. If you prefer the meat less pink, simply leave it in the oven for 5–10 minutes longer.
