Preparation method
Thread & Chill Köfte
Place the ground beef in a bowl and season exclusively with fine table salt and freshly ground black pepper. Knead the meat mixture vigorously for at least 5 to 7 minutes until it becomes elastic and sticky – this is precisely what gives traditional Tire köfte their characteristic firm texture without adding onions or bread. Divide the mixture into 8 equal portions, shape into elongated, thin sausages, and thread onto wooden skewers. Place the skewers in the refrigerator for about 15 minutes so that they remain firm during grilling.
Prepare Tomato Sauce, Yogurt & Bread
For the sauce, finely grate or dice the tomatoes. Heat 1 tbsp olive oil in a small saucepan, briefly roast the tomato paste, and add the tomatoes along with 50 ml water. Simmer over medium heat for about 8 minutes until a smooth, rich sauce forms. Season to taste with a pinch of salt and pepper.
For the yogurt, peel the garlic cloves, grate them finely, and stir into the Greek yogurt. Season with a pinch of salt and refrigerate.
Chef's tip
The hallmark of authentic Tire köfte is its pure seasoning: refrain from adding onions, garlic, or cumin to the minced meat – only thorough kneading and salt ensure the authentic elastic texture.
