Ingredients
- 300 g wheat flour Type 405
- 250 ml whole milk 3.5% fat
- 1 tsp spirit vinegar 8%
- ½ tsp baking soda
- ½ tsp fine table salt
Preparation
- 1Preheat the oven to 230 °C (top/bottom heat) and line a baking sheet with baking paper.
- 2Place all ingredients in a large bowl. Mix them quickly and work the dough only lightly until the ingredients are just combined. The dough should still be slightly lumpy – be careful not to knead it for too long, so the bread remains nice and fluffy.
- 3Turn the dough out onto the prepared baking sheet and shape it into a round, flat loaf with a diameter of about 15 cm and a height of approx. 6 cm. Cut a deep cross into the top of the bread with a sharp knife.
- 4Place the sheet in the oven and bake the bread for 10 minutes at 225–230 °C.
- 5Reduce the temperature to 195–200 °C and bake the bread for another 18–20 minutes until done.
- 6Remove the finished bread from the oven and let it cool on a wire rack for 30–60 minutes before slicing and enjoying.
Tip
Serve the soda bread best still slightly warm with salted butter or homemade jam. It tastes best fresh!
