Preparation method
Prepare dough & let rest
In a mixing bowl, mix the wheat flour with the baking powder and the fine table salt. Add the Greek yogurt, extra virgin olive oil, and about 120 ml of lukewarm water.
Knead everything first with a fork and then with your hands for about 5 to 7 minutes into a smooth, non-sticky dough. Shape into a ball, cover, and let rest at room temperature for about 20 minutes.
Make the savory cheese filling
Peel the yellow onion and dice it finely. Melt the unsalted butter in a pan over medium heat and gently sauté the onions for 4 to 5 minutes until translucent. Remove from the heat.
Chef's tip
Enjoy warm: Sıkma tastes best freshly rolled right out of the hot pan, as the residual heat melts the cheese wonderfully creamy.
Traditional accompaniment: A strong black Turkish Çay, chilled Ayran, or pickled olives and fresh tomato wedges pair wonderfully with this.
