Preheat the oven to 200 °C top/bottom heat (or 180 °C fan). Line a baking sheet with baking paper.
Peel the onion and cut it into fine dice. Coarsely grate the Allgäu mountain cheese.
In a bowl, mix the grated mountain cheese with sour cream, white wine, and the diced onion. Heartily season the cheese mixture with a pinch of table salt, freshly ground black pepper, and nutmeg.
Chef's tip
Non-alcoholic variation: The white wine can be replaced 1:1 with cloudy apple juice or a fine vegetable broth if preferred.
For extra crispiness: Briefly toast the bread slices in a toaster or pan before topping.
