Roughly chop the chocolate and melt it together with the butter in a bain-marie. Set aside and let cool slightly. Finely chop the lemon balm or crush it together with the sugar in a blender.

Whisk the lemon balm sugar with the eggs in a bowl until light and frothy. Important: The eggs should be at room temperature so that the chocolate mixture does not curdle.

Carefully stir the melted chocolate-butter mixture into the egg mixture. Finally, gently fold in the flour with a spatula.
Chef's tip
Serve the fondant with a scoop of vanilla ice cream or fresh berries for the perfect contrast to the warm chocolate core.
