Wash the turkey breast, pat dry, season with salt and pepper. Fry in a pan or grill for approx. 8–10 minutes per side until golden brown and cooked through. Let the meat cool and cut into fine strips.

Meanwhile, wash the celery stalks, string if necessary, and cut into fine slices. Core the apples, dice them, and immediately drizzle with half of the lemon juice to prevent browning. Halve the grapes.

In a small pan, melt the raw cane sugar with a splash of water. As soon as a light caramel forms, briefly toss the walnuts in it and let them cool on baking paper.
