Ingredients

  • 500 g minced beef
  • 100 g feta (crumbled)
  • 1 small red onion (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 4 pita breads
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp sweet paprika powder
  • 1 tsp ground cinnamon
  • 1 tsp chili flakes (dried)
  • 1 pinch fine table salt
  • 1 pinch ground black pepper

  • 3 tbsp extra virgin olive oil

    In a bowl, combine the minced beef with the crumbled feta, finely chopped red onion, garlic, tomato paste, and all spices (cumin, paprika powder, cinnamon, chili flakes, salt, and pepper). Knead everything well, preferably with your hands, so that the flavors are evenly distributed.

    Halve each pita bread (or cut a pocket into it) and fill with a thin layer of the meat mixture (approx. 1–1.5 cm thick). A thin layer is important so that the meat cooks evenly.

    Lightly brush the filled pita breads with olive oil on the outside so that they become extra crispy when grilled.

    Grill the Arayes over medium heat on the grill (or in a pan with a little oil) for approx. 3–5 minutes per side, until the meat is cooked through and the pita bread looks golden brown and crispy. Serve warm.
