Bursa Cantık ist die legendäre türkische Streetfood-Spezialität aus Bursa: Runde, herrlich fluffig aufgehende Mini-Pide mit einem saftig gewürzten Belag aus Rinderhackfleisch, Spitzpaprika, Tomaten und aromatischem Kreuzkümmel. Frisch aus dem Ofen wird der goldbraun gebackene Rand mit schäumender Butter bestrichen und heiß mit glatter Petersilie und Zitrone serviert.

Preparation method

Prepare & rest the Cantık yeast dough

Put the wheat flour into a bowl, make a well in the centre and crumble in the fresh yeast. Mix with approx. 220 ml lukewarm water, 15 ml olive oil and 1 tsp table salt. Knead everything by hand or with a food processor for about 8–10 minutes into a smooth, soft dough. Cover and leave to rise in a warm place for approx. 45 minutes until doubled in volume.

Prepare the juicy minced meat filling

Very finely dice or chop the onion, garlic cloves, tomatoes and pointed peppers. Place the minced beef in a bowl and mix with the chopped vegetables, tomato paste and the remaining 15 ml of olive oil. Season generously with sweet paprika powder, ground cumin, chilli flakes, black pepper and a little table salt. Knead thoroughly until a juicy, spreadable meat mixture forms.

Shape, top & bake the Cantık

Thoroughly preheat the oven together with the baking tray to maximum temperature (230–250 °C top/bottom heat). Divide the dough into 6 equal portions and roll into balls. On a lightly floured work surface, shape each ball into a round flatbread approx. 12–14 cm in size, pressing a clear indentation into the centre with your fingertips and leaving a finger-thick border.

Chef's tip

When shaping, the dough rim of Bursa Cantık should remain noticeably thicker than the centre so that it puffs up fluffy in the oven like a Neapolitan pizza.

The foaming hot butter on the oven-fresh crust is the indispensable signature of authentic Cantık bakers in Bursa – it delivers an incredible sheen and deep flavour.
