
Avocado Toast with Fried Egg and Radishes

Halve the avocado, remove the pit, scoop out the flesh from the skin, and cut into small cubes. Slice the radishes into fine rounds and the celery stalks into small cubes as well. Roughly chop the mint and slice the spring onions into fine rings.
Gently mix all prepared ingredients in a bowl. Season with salt and pepper and chill the mixture in the refrigerator until ready to use.
Meanwhile, prepare the fried eggs: Crack the eggs into a heated pan and fry over medium heat with the lid closed for about 5 minutes until the egg white is set. For a runny yolk, serve after 5 minutes; for a firm yolk, fry for another 3 minutes.
Chef's tip
For an extra kick of spice, you can sprinkle some chili flakes over the egg. The bread tastes especially good when toasted in a pan with a little olive oil.
