Preheat the oven to 180 °C and line a baking dish (approx. 20 cm × 30 cm) with baking paper.
Prepare the filling: Pit the plums and cut them into sixths. Place the plums together with the forest fruits and cinnamon in a bowl, mix everything well, and set the mixture aside.
Prepare the Dough
Separate the 5 eggs. Place the egg yolks in a medium bowl and the egg whites in a tall mixing bowl. Beat the egg yolks with 60 g of cane sugar until frothy. Beat the egg whites until almost stiff, add the remaining 30 g of cane sugar, and continue beating until a firm, glossy meringue forms.
Chef's tip
Serve the cake lukewarm with a dollop of freshly whipped cream or a scoop of vanilla ice cream for a special taste experience.
