Ingredients
- 500 g Carrots
- 2 tbsp Extra virgin olive oil
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika powder
- 3 tbsp Soy sauce
- 1 pinch Chili powder
- 1 tsp Liquid honey
- 1 tbsp Water
- 1 pinch Salt
- 1 pinch Black ground pepper
For Serving
- 150 g Feta cheese
- 1 handful Fresh flat-leaf parsley
Preparation
- 1Preheat the oven to 210 °C top/bottom heat. Wash the carrots, peel them, and cut them into diagonal slices. Place them in a baking dish and mix with olive oil, garlic powder, smoked paprika powder, chili powder, salt, and pepper. Roast in the preheated oven for approx. 25 minutes until al dente.
- 2Remove the dish from the oven. In the still hot dish, mix honey, soy sauce, and water directly with the carrots to create a glossy glaze. Arrange the carrots on plates, sprinkle with crumbled feta, and garnish with finely chopped parsley. Serve warm.
Tip
For a vegan version, you can replace the honey with maple syrup and the feta with a plant-based alternative.
