Ingredients

  • 500 g Carrots
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Smoked paprika powder
  • 3 tbsp Soy sauce
  • 1 pinch Chili powder
  • 1 tsp Liquid honey
  • 1 tbsp Water
  • 1 pinch Salt
  • 1 pinch Black ground pepper

For Serving

  • 150 g Feta cheese
  • 1 handful Fresh flat-leaf parsley

Preparation

    Preheat the oven to 210 °C top/bottom heat. Wash the carrots, peel them, and cut them into diagonal slices. Place them in a baking dish and mix with olive oil, garlic powder, smoked paprika powder, chili powder, salt, and pepper. Roast in the preheated oven for approx. 25 minutes until al dente.

    Remove the dish from the oven. In the still hot dish, mix honey, soy sauce, and water directly with the carrots to create a glossy glaze. Arrange the carrots on plates, sprinkle with crumbled feta, and garnish with finely chopped parsley. Serve warm.
Tip
For a vegan version, you can replace the honey with maple syrup and the feta with a plant-based alternative.
