Wash, peel, and cook the carrots until soft. Then blend them into a fine puree.

Preheat the oven to 180 °C. Thoroughly mix the carrot puree with all other ingredients in a large bowl until everything is evenly distributed.

Spread the mixture onto a baking sheet lined with parchment paper and bake for approx. 20-30 minutes until the granola is golden brown and crispy. Turn occasionally.

Chef's tip

For an extra spicy note, you can also add some smoked paprika powder.
