Preparation method
First, prepare the berry puree: Let the frozen forest berries thaw slightly or warm them briefly. Mix them with the fresh berries and finely puree everything with an immersion blender. Then strain the puree through a sieve to remove seeds.
Mix the berry puree with the sweetened condensed milk and set the mixture aside. Whip the cream until stiff and carefully fold it into the fruit-condensed milk base with a spatula.
If you have an ice cream maker, pour the mixture in and let it pre-chill. Without an ice cream maker, transfer the mixture into a sealable container and place it in the freezer. After about an hour, prepare the strawberry swirl: Puree the strawberries, mix in vanilla sugar and (optional) gin. Spoon this strawberry mixture onto the partially frozen ice cream base and create circular patterns with a wooden stick for the marble effect.
