Ingredients
- 500 g quark (40% fat)
- 100 ml whipping cream
- 1 Bourbon vanilla pod
- 40 g birch sugar (xylitol) or granulated sugar
Preparation
- 1Put the quark, whipping cream, and sugar into a blender. Halve the vanilla pod lengthwise, scrape out the seeds with a knife, and add them to the blender as well.
- 2Blend all ingredients thoroughly until a homogeneous, creamy mixture is formed.
- 3Pour the mixture into an ice cream maker and let it run for about 30 minutes. The ice cream can be served directly after preparation in small bowls or waffles.
- 4If you don't have an ice cream maker: Pour the mixture into a stainless steel bowl and place it in the freezer compartment. During freezing, take the bowl out every 20–30 minutes and stir the mixture vigorously from the edges towards the center. Repeat this process until the ice cream has reached the desired consistency. Let it thaw slightly before serving.

Serve the ice cream with fresh berries or a fruity berry sauce for an extra portion of freshness.
