Preparation method
Roll out the puff pastry (or buy it pre-rolled). Whisk the egg in a small bowl and season with a pinch of salt. Generously brush the entire pastry with the whisked egg.
Lightly score the edges of the pastry (approx. 1 cm wide) all around with a knife, without cutting all the way through. Sprinkle these edges evenly with sesame seeds.
Slice the Camembert into thin pieces. Wash the pears, core them, and also cut them into fine wedges. Now alternately top the inside of the pastry with cheese and pear slices. Once the surface is covered, drizzle everything with maple syrup. Sprinkle with crushed pink pepper, dried cranberries, and almond flakes.
Chef's tip
Serve the tart with a fresh lamb's lettuce salad and a glass of dry white wine for the perfect autumn dinner.
