Preparation of the Meat Filling
Finely chop the red onion and garlic. In a large bowl, combine the ground beef with the crumbled feta, onions, garlic, tomato paste, and all spices (cumin, paprika, cinnamon, chili flakes, salt, and pepper). It's best to knead well with your hands so that all the flavors are evenly distributed.
Filling and Grilling
Halve the pita breads (or cut a pocket into them) and fill evenly with the meat mixture. The layer should be about 1–1.5 cm thick so that the meat remains juicy while cooking, but is thoroughly cooked.
Lightly brush the outside of the filled pita breads with olive oil. This ensures a particularly crispy texture and a beautiful golden-brown color.
