Hasan Paşa Köfte sind ein beliebter türkischer Streetfood- und Hausmannskost-Klassiker: Saftig gewürzte Rinderhackfleisch-Schiffchen, gefüllt mit samtig-cremigem Kartoffelpüree, verfeinert mit geriebenem Käse und im Ofen in einer fruchtigen Tomatensauce goldbraun überbacken. Preparation method
Prepare mashed potatoes
Peel the potatoes, cut into rough cubes, and cook in boiling salted water for about 20 minutes until tender. Then drain, add the butter and lukewarm whole milk, and mash everything into a smooth, firm puree. Season to taste with a little salt and pepper.
Prepare and shape köfte
Finely grate or chop the onion and garlic cloves. In a large bowl, thoroughly knead the minced beef with the onion, garlic, breadcrumbs, egg, ground cumin, sweet paprika powder, chili flakes, 1 tsp salt, and freshly ground black pepper until a homogeneous mixture is formed.
Preheat the oven to 200 °C top/bottom heat (180 °C fan). Shape the minced meat mixture into 8 equal-sized balls. Place the balls in an oiled baking dish and use your thumbs to press a deep hollow into the center of each, creating small bowls or nests. Pre-bake the minced meat nests in the preheated oven for about 10 minutes.
Chef's tip
The dish tastes especially authentic if you fold some freshly grated Kaşar cheese directly into the warm mashed potatoes.
This traditionally pairs well with a crisp Turkish shepherd's salad (Çoban Salatası) and fresh flatbread.
