Preparation method

Peel the fresh mango and cut the flesh into pieces. Let the frozen mango thaw slightly until it becomes soft. Combine both and finely puree with an immersion blender.

Pass the mixture through a fine sieve to remove any fibrous parts. Transfer to a pot, add honey and lemon juice, and gently heat so that the honey optimally combines with the fruit puree.

Let the mixture cool and pour it into an ice cream maker. If you don't have an ice cream maker, pour the mixture into a container and place it in the freezer. Stir vigorously about 2–3 times during freezing to achieve a fine consistency.
