Ingredients
- 6 apricots
- 2 tsp cane sugar
- 20 ml lime juice
- 1/2 lime
- 1 handful mint
- Sparkling mineral water
- Ice cubes
Preparation
- 1Pit the apricots, halve them, and place them in a blender with one tablespoon of water. Blend into a fine puree. For an extra smooth result, the mixture can also be strained through a sieve.
- 2Distribute lime juice, lime wedges, cane sugar, and mint leaves among two glasses. Gently muddle with a pestle to release the flavors. Then, add three teaspoons of the apricot puree to each glass.
- 3Fill the glasses with ice cubes and top up with sparkling mineral water. Stir with a straw and serve. For an alcoholic version, white rum can be added.
Tip
For the best flavor, use fully ripe, soft apricots. If the fruits are very sweet, you can reduce the amount of sugar as desired.
