Preparation method

Halve the dragon fruit lengthwise and scoop out the flesh with a spoon. Place it in a blender with the coconut water, maple syrup, and lemon balm leaves, then blend until smooth.

Fill popsicle molds halfway with the mixture. Roughly chop the freeze-dried fruits and add them to the molds. Fill up with the remaining dragon fruit mixture and sprinkle again with a few fruit pieces.

Place the molds in the freezer for at least 5-6 hours, preferably overnight.

Chef's tip

For an extra creamy texture, you can replace part of the coconut water with coconut milk.
