Preparation
Thoroughly preheat the oven together with the baking sheet to 220 °C conventional heat (or 200 °C fan). A hot sheet ensures a particularly crispy flammkuchen crust.
Thoroughly wash the apples, quarter them, and remove the core (peel if desired). Slice the apple quarters wafer-thin using a mandoline slicer or a sharp knife, and immediately toss with 1 tsp lemon juice so they keep their appetizingly bright color.
In a small bowl, stir the sour cream with 1 pack vanilla sugar and 1 tbsp brown cane sugar until smooth. In a separate small bowl, mix the remaining brown cane sugar (1 tbsp) with 1 tsp ground cinnamon.
Chef's tip
For the best flavor, aromatic, slightly tart apples like Boskoop, Elstar, or Cox Orange work particularly well, as they create a wonderful contrast to the sweet cinnamon note.
Gourmet tip: For adults, the sour cream mixture can be refined with a small dash of Calvados (apple brandy).
