Preparing the apple compote
Peel, quarter, core, and cut the apples into small pieces. Wash the lemon under hot water, finely grate a little zest, and squeeze out 2 tbsp of lemon juice.
Put the apple pieces into a small pot together with the lemon juice, lemon zest, vanilla sugar, half of the cinnamon, and about 2 tbsp of water. Cover and simmer over medium heat for about 10 minutes until soft.
Remove the pot from the heat and purée the soft apples with an immersion blender or potato masher into a fine, velvety purée. Allow the apple purée to cool completely to room temperature.
Chef's tip
For a particularly aromatic flavour, slightly tart autumn apples such as Boskoop, Cox Orange, or Elstar are best suited.
If you prefer to avoid raw egg whites, you can also whip the apple purée using only stiffly whipped cream and a little quark.
