Preparation method
Preparation & grapes
Thoroughly wash the grapes, pluck them from the stems, and pat dry. Cut half of the grapes in half. Separate the eggs, as only the egg yolks are needed for the wine foam (use the egg whites for something else).
Melt the butter in a pan. Sprinkle in 20 g of the sugar and let it lightly caramelise. Add the grapes along with 1 tsp of lemon juice and gently sauté for about 3–4 minutes until they slightly burst and become aromatically glossy. Set aside and allow to cool.
Wine foam cream & serving
In a heatproof bowl set over a hot water bath, beat the egg yolks with the remaining 40 g of sugar and the vanilla sugar using a whisk or hand mixer until frothy. Slowly pour in the Riesling white wine in a thin stream while whisking continuously until a thick, creamy foam forms (takes approx. 5–7 minutes).
Chef's tip
Non-alcoholic alternative: The dry white wine can be replaced with a mixture of naturally cloudy white grape juice and a little lemon juice.
Wine selection tip: Use a fruity, dry German Riesling from Baden or the Palatinate to give the wine foam cream a delicate, fresh hint of acidity.
