For the Pancakes

  • 100g Ricotta
  • 50g spelt flour
  • 25g wheat flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 1 tbsp cane sugar
  • 100ml milk
  • Zest of one lemon
  • Butter for frying

For the Caramelized Apples

  • 1 tsp butter
  • 1 tsp maple syrup
  • 1 apple

    Carefully fold the egg white and ricotta into the batter.

    In a bowl, mix flour with baking powder and salt. Separate the egg and in another bowl, beat the egg white until stiff, add sugar and continue beating until a meringue-like consistency is formed.

    Whisk the egg yolk with the milk, stir into the flour mixture, add lemon zest and mix everything well.

    Melt a small piece of butter in a pan and add one tablespoon of batter. Fry the pancake for a few minutes on both sides. To keep the pancakes warm, you can stack them on a plate in the oven at 70°C.

    Wash the apples and cut them into cubes. Melt the butter in a second pan. Add the apple pieces and fry for about one minute. Add the maple syrup and caramelize the apples for another minute.

    Serve the apples with the pancakes. Sprinkle with cinnamon as needed or serve with maple syrup and lemon juice.
