For the Pancakes
- 100g Ricotta
- 50g spelt flour
- 25g wheat flour
- 1 tsp baking powder
- 1 pinch salt
- 1 egg
- 1 tbsp cane sugar
- 100ml milk
- Zest of one lemon
- Butter for frying
For the Caramelized Apples
- 1 tsp butter
- 1 tsp maple syrup
- 1 apple
Preparation
- 1Carefully fold the egg white and ricotta into the batter.
- 2In a bowl, mix flour with baking powder and salt. Separate the egg and in another bowl, beat the egg white until stiff, add sugar and continue beating until a meringue-like consistency is formed.
- 3Whisk the egg yolk with the milk, stir into the flour mixture, add lemon zest and mix everything well.
- 4Melt a small piece of butter in a pan and add one tablespoon of batter. Fry the pancake for a few minutes on both sides. To keep the pancakes warm, you can stack them on a plate in the oven at 70°C.
- 5Wash the apples and cut them into cubes. Melt the butter in a second pan. Add the apple pieces and fry for about one minute. Add the maple syrup and caramelize the apples for another minute.
- 6Serve the apples with the pancakes. Sprinkle with cinnamon as needed or serve with maple syrup and lemon juice.
