- 1 Banana
- 100 ml Kefir
- 100 g Oats
- 2 Dates
- 2 g Matcha Powder

- 1 tbsp Coconut Oil

Put all ingredients (except a few banana slices for decoration) into a blender and process until a smooth batter is formed.

Heat a pan over medium heat and add some coconut oil. Don't be too sparing with the oil, so the pancakes can be easily flipped later.

Cook the pancakes in batches for about 2 minutes per side until golden brown. Garnish them before serving with the remaining banana slices, a dollop of kefir, and a pinch of matcha powder.
Chef's tip
For particularly fluffy pancakes, you can let the batter rest for 5 minutes before cooking, so the oats can swell slightly.
